If I edit an old post, will it bump the thread up to the top as if it were a newly-dated post?
Or will it remain back in the back pages?

No, editing an old post won't bump the thread. It will only show as an update in the lower right-hand corner of the post.
If you want to delete a post completely, just click on the gear icon drop-down menu and choose Delete Post.
